Legendary Aviation Coffee Company

Legendary Aviation Coffee Company is a small-batch coffee roaster in Rockwall, Texas. It is owned and run by a disabled Army aviation veteran. The company sells coffee, loose-leaf tea and small-batch syrups to the aviation community.

The founder is Josh Cook, an Army aviation veteran and flight test engineer. The company says its story began in 2019 in Palmdale, California. It now roasts in Rockwall. The founder wanted coffee for pilots that was never burnt or bitter.

The beans are air-roasted on a Loring S35 Kestrel roaster. The company sells single origin coffee only, with no blends. It says it roasts only beans scored above 85 on the 100 point scale, which it calls the top 1 percent of specialty coffee. One example is V-Tail Bonanza, a washed coffee from El Salvador with almond, brown sugar and milk chocolate notes.

The shop also has a Wings and Grace collection. It honors women in aviation and includes a coffee named NR7952 The Little Red Bus, a Golden Yunnan black tea named Warbird Rosie, and a syrup named Strawberry Grace. Another syrup, Pecan Bliss, uses honey, cane sugar, vanilla, cinnamon and pecan extract.

The company says it pours coffee at airshows, fly-ins and aviation gatherings, and sponsors events. It says it gives 10 percent of profits to veteran and aviation nonprofits, including groups that train service dogs for veterans. The site shows an average rating of 4.9 from 3,082 verified reviews.

The website works as an online shop. It also has a contact form and a careers page.
